My cuisine is based on a philosophy deeply rooted in respect for the product, nature and meaning. Every day, my menu is built around new arrivals, with common sense and sustainability in mind I don’t want fishermen to take to the sea just to fill an order. I prefer to to sublimate fish caught in good conditionsI prefer to sublimate and work with what nature has to offerrespecting its rhythms.
This is how my menus come about : a desire to limit waste, to make the most of every part of the fish, to explore its textures and subtleties with the right cooking, the right technique, and particular attention to the elegance and lightness of the dish..
Working locally is a cornerstone of my approach. Not only does it guarantee freshness and quality, but it also create a link between the terroir, the product and the plate..
Each dish has to tell a story: it’s not just a question of creating for the sake of creating, but of giving meaning to what we serve. but to give meaning to what we serve..
In my opinion, this is where true cuisine begins: a dialogue between tradition and modernity, when a match reveals an emotion, when a plate becomes a message.
My cuisine is inspired by French classics, revisited with a modern twist, and influenced by Belgian and Nordic culinary cultures. Fermentation and delicate techniques are sometimes used, but always in a spirit of finesse and refinement. but always in a spirit of finesse and refinement..
Fish is my favorite playground: noble, delicate, demanding. It calls for precision and creativity. Through it, I seek to convey my sensitivity and commitment.
Because beyond taste, I believe we have a role to play. As cooks, we are the first architects of a sustainable future. It’s up to us to develop our business respecting the environment, the living world and those who feed us.
It’s this vision that I strive to bring to life in each of my dishes.
