Florian Dauphin born on August 4, 1995, is the restaurant’s chef.

Passionate about his profession from an early ageIn 2003, he started out as a dishwasher – a first step that suited his father just fine! After gaining experience in several Michelin-starred establishments, Florian has decided to join his parents at Die Alte Brauerei, Florian decided to join his parents at Die Alte Brauerei in September 2023 driven by the desire to share his passion and know-how.

In love with his job, he ensures the happiness of his team and customers every day.

For Florian, his family is as much his team as the customers who put their trust in him.

If you don’t always see him coming to meet you spontaneously, don’t worry: he’s currently working on perfecting his German so that he’ll soon be able to talk to each and every one of you as he sees fit.
